Gluten Free Sausage Stuffing

Grandma’s Christmas turkey with stuffing to remember…

Memories are often triggered by the senses – sight, smell, taste, sound. These are the things that make the holidays for me. This recipe reminds me of my grandmother’s stuffing and tastes like it could have come right out of one of her birds. I recommend cooking your stuffing apart from your bird for several reasons.

  1. An un-stuffed bird will cook faster and safer;
  2. You can cook the stuffing ahead as it freezes and reheats well;
  3. Extra bonus – you won’t be limited to the size of the bird’s cavities so you can make more stuffing.

Oven Temperature – 375 F

Ingredients

8 Cups                  – 320 g Dried and toasted gluten free bread cubes – gluten free. Approximately one loaf of Crumbs and Roses bread – cubed, dried and roasted until lightly golden. Purchase Dried Bread Cubes

500 grams          – Pork Sausage meat (breakfast sausage patties work great)

1 1/2 Cups           – diced sweet onions

1 Cup                    – Finely diced celery (optional)

1 Tbsp.                 – Poultry Seasoning (to taste, maybe doubled if you want a stronger flavour)

3 Cups                  – Chicken stock, make sure it is gluten free too.

½ Cup                  – Butter

2                             – Ripe Pears – peeled and finely diced. (Apple works well)

 

Method

1/ Place the frozen sausage meat, still in plastic, under cold running water to thaw while you do the next step. This will thaw the meat safely and quickly. It should be thawed about the time it needs to be added to the pan. Preheat oven to 375 F.

2/ Sauté the onions and celery over medium-low heat until the onions just start to caramelize.

 

3/ Add the thawed sausage meat to brown. Meanwhile mix up your bouillon or heat your stock.

4/ Add the poultry seasoning, stirring it into the mixture. Add remaining ingredients except bread cubes and bring to a boil.

5/ Butter a large casserole dish or foil packet.

6/ Place the bread cubes into a large bowl then pour the hot ingredients over them and toss lightly. Be careful as over mixing will break down the cubes and create a heavier texture. Place the stuffing into a lightly buttered baking pan or parchment lined foil packet.

7/ Cover the casserole or close up the packet and place into a pre-heated oven for 30-45 minutes (More time at a lower temperature, less at a higher).  After baking the stuffing should be lightly crusted around the dish and steaming hot – at least 165ºF before serving. Serve hot.

If you are making ahead – this recipe can be frozen. Reheat to at least 165ºF before serving.

NEW LOCATION!! 443 Banks Rd., Kelowna

We will NOT be able to have mini donut day tomorrow (July 28, 2018) due to being locked out of the former premises and moving the store to a new location. We will be up and running again by next weekend, we hope, but we are so thankful that we were able to get out in time. The owners of the mall locked down the Purple Nurple today and put up a notice against the owners of the Purple Nurple. They also took down our notice informing our customers of our move.

Thankfully, our new LOCAL landlord was most kind and let us move in earlier than planned to the new location at 443 Banks Rd. He even worked with us and made sure we had what we needed. We will be getting new signage!!! Hurray! We had been looking for a new location already due to evidence that the owners of the mall did not want a gluten free bakery as a tenant in this location.

Orders now closed -Gluten Free Perogies

GF Perogies (Potato with Cheddar, Cottage Cheese and Onion).

This is a special announcement for all the perogie, pierogie, wareneki fans in Crumbs and Roses land. This Saturday we will be offering you a chance to taste test our perogies!!!!! We will be making time over the next two weeks to produce hand made potato with cheddar, cottage cheese and onion perogies all in one! You can pre-order online for pick up on July 13 and 14. This is a one time only offering as they are very time intensive to make. They will be sold frozen in packs of 10 for $8. Each perogie is 40-45 g. The dough has dairy so they will not be dairy or egg free.

Gluten-Free diet may have health benefits for IBS sufferers.

Recently we had a relative with IBS try our bread, just on the off chance that it would help her gut deal with the stresses and challenges of her holiday travel through British Columbia. She reported back a couple of weeks later that the bread sat really well and that her IBS symptoms had improved.

Last week Celiac.com reported on researchers’ findings at McMaster university in their forum article. This research found it was possible to predict through testing which IBS sufferers would benefit the most from a gluten-free diet. Interestingly they also found that sufferers could expect improvement even by cutting back on gluten without cutting it out completely.

At first it might seem counter intuitive that a bread like our Brown Flax Bread could help, but it is not an unusual thing.  Our breads are made with flax and psyllium fiber.  A recent article in the International Foundation for Functional Gastrointestinal Disorders webpage wrote, “A gradual increase in dietary fiber can modify, improve and, in some people, eliminate the abnormal bowel habits and painful symptoms associated with IBS.” So, gluten free or not, the moderate increase in fiber could help.

We were very happy that our relative got some relief on her holiday.  If you suffer from IBS, reducing gluten in your diet might help.
